Pastel de Tres Leches y Chocolate
So what do cooks do when someone they work with at a restaurant is leaving?
Cook. Or bake. Or both.
Well, you know, much like any other workplace—it depends on whether or not you got along well with the person in question. Luckily for me, the people at Happy Elephant are fantastic to work with, so it’s sad that someone’s leaving. Particularly since I’ve been cooking with him for as long as I’ve been there, and he’s taught me a lot!
Still, any excuse for a party is a good one, yeah? What you see here came from this recipe, and indeed, as it says, it’s MUY sabroso. 1

What was this realization, you ask?
This recipe? Is TOTALLY what Chocobliss2 wished it was back in the day. Absolutely. Utterly. Without question.
It was quite nice. Much weeping and ganaching of teeth occurred, of course, but that’s only to be expected.

- If you don’t know what Chocobliss was, I weep for you. Seriously. [↩]
