Baby Got Bundt
It began as a simple craving. I really wanted an angel food cake with fresh whipped cream and strawberries. But, of course, I didn’t have any strawberries in the house. And I’d just gone shopping. And it was pouring out. And I was busy doing other things.
Obviously, I wasn’t going anywhere.
Then I found a recipe for individual spiced angel food cake over at Baking Bites and instantly knew it was what I was looking for. After all, I didn’t need a whole cake to myself. Also, I already had everything the recipe called for in my hot little hands.
I took that recipe and trebled it. I also added a pinch of ground cloves to the mix, as well as using a 1:1 ratio of both vanilla and almond extracts. Nicole suggests in her recipe that you can substitute almond for vanilla, but I don’t like to take vanilla out because it does a nice job of enhancing the other flavors it’s paired with.
I then filled an awesome mini-bundt pan my sister gave me ages ago with the resulting cake batter. The result was six little spiced angel food mini-bundt cakes, like you see above. If I’d just stuck to three, they’d have been bigger…but they’re fine as they are.
The other change I made was topping it with a lemon-ginger curd, as you can see in the photo. With that level of spice in the cake and it being the hottest day we’ve had so far this year, the addition of lemon curd just made sense. If you add a tiny bit of fresh minced ginger to your lemon curd, I defy you to notwant to eat it all before doing whatever it is you’vemade the lemon curd for in the first place. :9 Also, an added bonus of topping these cakes with lemon curd is that it’s a handy place to stow those egg yolks you’ll have left over from making the angel food cakes. Just swap out a couple of the whole eggs your lemon curd recipe will call for with an equal number of your leftover yolks—make sure there’s at least one whole egg left in the lemon curd, though.
I’ve got five of these left in my fridge. Because of the level of spice, this angel food cake keeps a bit better than a normal one. But still, they should be eaten quickly, so I’ve got some work to do.
